I read a lot of documention on this and for some reason i cannot get Audio out of HI Fi Berry DAC. I’m using the proper overlay and the latest version of Balena OS

Which overlay are you using? I don’t see it in your config, but I’m using BALENA_HOST_CONFIG_dtoverlay = hifiberry-dacplus and it’s working fine (I’m using an amp2 but afaik it’s supposed to be the same according to the docs)
