I have the install MacOS Sonoma app, but Etcher is looking for an iso or dmg file. It won’t let me select the install app, and I don’t know how to convert it into a file that Etcher will like.

Now what?

I’m guessing you’re trying to create installation media for macOS, in which case there’s a particular way to do it, try this: Create a bootable installer for macOS – Apple Support (UK)
