Can you please check with the new 2.56.0+rev1 image from the staging dashboard and again add these to uEnv.txt:
Then, from a container that has ENV UDEV=1 try
ip link set can0 type can bitrate 125000
ip link set up can0
and see if the can0 interface is brought up?
